I love going down into my dad's cellar and picking wines. He always has a new fantastic wine for me to try, pairing it with a delicious meal. This wine is particular I was dying to try because I love Joseph Phelps and have tried many Insignia's from different vintages.
This wine needs a little time to open up at first, but once it does it is absolutely fantastic! The color is dark purple with spicy black currant and allspice aromas. Flavors of plum, coffee, cedar, and vanilla make this wine very sexy and wonderful to drink. This full bodied spectacular wine has a lingering finish with 88% Cabernet Sauvignon, 10% Merlot, and 2% Cabernet Franc. It is gorgeous and ready to drink now but also has a lot more aging potential.
For dinner we had grilled lamb, mixed green salad, and home made mac & cheese! The lamb paired beautifully with this wine!
