As always, visiting my Dad means a great meal and great wine! Celebrating National Cabernet Day was a Foodie Holiday we could not turn down. To make sure this day was done right, dad planned a dinner of Cowboy Rib Veal Chops and Lavender Roasted Zucchini paired with a 2003 Volker Eisele Napa Valley Cabernet Sauvignon. This wine took a little time to open up, but when it did, it was magnificent.
The Cowboy Rib Chops were cooked medium rare of course and the roasted lavender and zucchini brought out many fruit forward and chocolate notes in the wine that made this meal sensational. For those of you who decided to celebrate National Cabernet Day; right on! Just know though, Cabernet, as well as all wine, doesn’t need a special day to be celebrated. Every day should be national wine day!
