Crave a great calamari salad in the summer? If so, this delicious Grilled Calamari Corn Salad is absolutely for you! Using one of my favorite imported butter’s: Finlandia, I was able to make this delicious meal in my small NYC kitchen with ease.
Finlandia is crafted with pure milk from family-owned farms. The unsalted is what I used for this recipe, as I am slightly addicted to salt and, and tend to salt everything after I cook (I don’t like to cook with salt for that reason). This butter is Rich and creamy in flavor, and melts beautifully on my grill Pan. What’s great about Finlandia is that nothing is artificial, and they’re are no added hormones, making it as healthy as butter can possibly be!
Finlandia also makes Swiss Cheese and Salted Butter as well. I recommend the salted butter for making some incredible flaky pie dough, and the swiss cheese adds that delicious touch to a warm ruben sandwich; perfect for fall. Below is my recipe for this delectable Finlandia Butter Grilled Calamari and Corn Salad.
Grilled Calamari Corn Salad– by Sara Lehman
3oz Finlandia Unsalted Butter
4-5 Heads Calamari (you can also buy the rings)
2 Plum Tomatoes (diced)
2 Garlic Cloves (minced)
1/2 C Corn (shaven off the cob, frozen is fine too)
TT Salt & Pepper
Method: In a mixing bowl, melt 1oz of Finlandia unsalted butter. Toss calamari rings with melted butter and place onto grill pan to one side. On the other side of the pan, place the tomatoes and corn. Let brown for about 3 minutes, and add the rest of the butter. Cook 4-5 minutes on medium heat and add minced garlic last. Toss salad together on grill pan so butter coats mixture evenly. Turn off heat, and add salt and pepper to taste.
