The Lodge at Woodloch takes seasonal cooking and sipping to a whole new level. On top of all the amazing activities such as Terrarium building and Mosaic classes (which my mother and sister loved for $10.00/pp), you can partake in healthy cooking demonstrations and wine classes where you will learn a lot, while eating and drinking plenty too!

The weekly activities calendar here at the spa changes, so when looking over the schedule and deciding what I wanted to do, when, I saw a winter foods culinary demonstration that I had to check out. Chef Derrick (who also spends most of his time on the farm growing the fresh organic vegetables) is a Johnson & Wales Graduate like myself. He is funny, charismatic, and very knowledgeable, with a degree in Culinary Arts and Nutrition Science. During the demo, he taught us how to utilize a wide variety of winter vegetables and created some amazing dishes for us to taste. Now, I’m not normally a vegetable slaw person, however his winter slaw was out of this world, yum! On top of that, he made a root vegetable soup from stock to bowl that was one of a kind, and absolutely delicious. This one hour demo is very informative, and comes complete with recipes, tips, and tricks that you can try at home.

After the cooking demo it was time to head to the Old World v.s. New World Wine Class with Sommelier and Beverage Director Leslie Britt. I absolutely love her wine classes, and even though I am a sommelier myself, I always find I learn something new when I am with her. She explains wine in such a way that is easy enough for anyone at any wine level to understand. She is funny, informative, and very energetic. Here she compares “old world wines to new world wines” where we sipped wonderful wines from Pennsylvania to Italy, to France, and even Arizona (which was a first for me)!

Leslie is kind, sociable, and also works on the dining room floor during dinner service, where she can and will help you pair any wine on the menu with as many courses as you would like. The pairing options are endless with her award winning wine list, and cocktail program, which you can enjoy during lunch and dinner. I highly recommend taking some time to take one or both of these classes during your stay at The Lodge at Woodloch!
