Chocolate and wine… sounds like a perfect pairing right? Well did you know, that like wine, there’s a way to taste chocolate too? Amedei, an Italian chocolate company in Tuscany was proud to present its array of chocolates and teach us how to properly taste! Guiding us through this tasting was Francine Segan, a food historian and chocolate lover. Here we tasted through many chocolates in which expressed many aromas, flavors, and styles.
Amedei is an upscale chocolate company that practices the finest methods in which to make chocolate. Francine took us through the history of chocolate and how it goes from bean to bar. We were fortunate enough to try Amedi’s Porcelana blend, which is an award winning and yet rare white cocoa strain from Criollo of Venezuela. Alongside the rare tasting were chocolates from Venezuela, Jamaica, and Madagascar.
Now because Amedei’s chocolates are so exquisite, they had to show us how they can also be used in a variety of light bites. Amedei chocolates topped with Foie Gras, Warm White Chocolate and Pistachio shooters, and Eggplant on Brioche with chocolate… everything was out of this world yum! Paired with this evening was a Gruet Rosé, which was perfect with the sweet, savory, and celebratory aspects of the evening.
