St. Patrick’s Day is this Saturday, March 17th. This is a fun day for me not only because of my Irish heritage but because there’s nothing I love more than corned beef and Irish whiskey! This year my whiskey choices were a bit different when pairing my corned beef, cabbage, and potatoes. I spiced things up a bit this year and brought rye bread and truffle mustard to the table. Since this meal is more of an Irish American tradition, I felt it was a fun way to add some new depth and flavor to the holiday feast.

For those of you who enjoy Irish whiskey, I have chosen some that pair nicely with the salty corned beef and sides. I enjoy Irish whiskey as well as scotch, but if you’re new to sipping spirits, Irish whiskey will be a bit smoother on your palate due to malting process (no peat is used).

” Single Pot Still whiskey is unique to Ireland in general and to the Midleton Distillery, Co. Cork, in particular, and is regarded as the quintessential style of Irish whiskey. Made from a mash of malted and unmalted barley and then triple distilled in traditional copper pot stills, Pot Still whiskeys are characterized by full, complex flavors and a wonderful creamy mouthfeel”. –Jamesonwhiskey.com

So, whether you’re preparing a big meal before you head out to the bars, or are having friends over and want to entertain the Irish American way, make sure to pair responsibly!
