During a recent visit to New York City, I had the pleasure of exploring Sugar Mouse, a vibrant addition to the East Village nightlife scene. As the sister bar to Sour Mouse in the Lower East Side, Sugar Mouse offers an underground gaming and AI-infused bar experience like no other.
Descending the stairs into the venue, I was immediately greeted by the welcoming presence of Bar Director and Mixologist Andressa Pires. Her inventive cocktails perfectly embody the whimsical theme of Sugar Mouse. The bar’s ambiance is enhanced by walls adorned with bright, artwork created by local art students, contributing to a dynamic and immersive environment.
Sugar Mouse’s versatility is evident in its diverse programming, which includes sporting events, TV show watch parties, trivia nights, and lectures. Owner Professor Aaron Ho explains, “At Sugar Mouse, we’re all about pushing boundaries and creating unique, memorable experiences for our guests. Blending AI technology with the cocktail experience was inspired by our desire to combine innovation with the art of mixology. AI allows us to personalize drink recommendations, create interactive elements, and enhance the overall guest experience in ways that are both exciting and cutting-edge. During my visit, I sampled several of Andressa’s creations, including the signature Sugar Mouse and Secret Sour cocktails, both of which were delightful. The team describes the Sugar Mouse Cocktail as “a delightful adventure in a glass, featuring playful, candy-inspired flavors that are as whimsical as the world it represents.” While the exact ingredients remain a closely guarded secret, this element of mystery adds to the drink’s allure. Another standout is the Sugar Mouse Fairytale, which elevates the magic with vibrant fruity flavors and whimsical garnishes.
Andressa reflects on the creative process behind these cocktails: “Personally, I really enjoy our first signature Sugar Mouse Cocktail. We spent so much time curating by selecting and tasting different alcohols, experimenting with flavor pairings, and blending candy-inspired elements. The result is a drink that’s not only delicious but also a true science of bartending and mixology. Creating the perfect cocktail is all about understanding the balance of sweet, sour, and bitter notes, as well as the impact of different alcohols on the overall flavor profile. We wanted to craft a drink that not only tasted great but also showcased the artistry and precision behind the cocktail-making process.
