Recently I tasted Roccafiore Prova D’Autore, an Organic winery located in Italy’s Umbria region.

Imagine… smooth hills covered with sun tinged grass and a refreshing breeze that ignites images and the memories of an ancient land. This is Umbria!

IMG_1758This wine is a concentrate of Umbria’s territory and expresses the best of the Montepulciano, Sagrantino and Sangiovese grapes cultivated by Roccafiore winery in its bio-natural reserve, in this central region of Italy. An “open garden” of vineyards, lawns and olive groves. This breathtaking landscape is also home to the resort, the restaurant and the wellness center hosted by the winery’s property. This is the ideal place for wine and relaxation, which you will  need after this holiday season!

The wines itself is wonderful and for those seeking some Italian experiences in your very own home (until you book yourself a ticket to this lovely winery), try the Roccafiore Prova D’Autore! I choose to pair it with a modern version of Italian cuisine. I put a simple spin on one of my favorite classic dishes. Chicken Marsala over Curry Pappardelle Pasta hand made by Rana inside the Chelsea Market, NYC. Nothing beats fresh pasta; absolutely nothing. The curry pasta really complimented the marsala and no extra sauce was needed. The simplicity of this dish with the modern Indian influenced addition made this a perfect pairing with the Roccafiore Prova D’Autore, which is full of plums, cherries and violets. A medium body and lingering finish thats expressive of fruit and spice. This wine is perfect with the curry spice and tangy, sweet and savory chicken marsala!
